Why are some coconut waters yellow, pink, or clear?

Coconut water contains two enzymes Polyphenoloxydase (PPO) and Peroxidase (POD). When the coconut water is removed from the shell, It is exposed to the air which carries bacteria. To prevent spoilage, coconut water must be pasteurized to neutralize these bacteria before packaging. During this process, an enzymatic reaction creates this discoloration. Colors will vary.
